Crunchy Granola Bars

I eat a lot of granola bars. I’m one of those people that has to eat every few hours – so I always have a snack with me. Enter granola bars. Delicious, “healthy,” treats – except the truly delicious ones aren’t so good for you, and they’re pretty expensive. On second thought, not so delicious. Enter my recipe, and its easy as pie.

I made this recipe with ingredients that I pulled out of my pantry. Don’t sweat it if you don’t have all the ingredients. Just make sure you have the right amount of liquid to bond all of the ingredients. Feel free to add in your favorite ingredients. I can promise that if you follow this recipe, it will be delicious, economical, and healthy!


2 C rolled oats
2 T chopped macadamia nuts
½ C toasted coconut
¼ C dark chocolate chips
1/3 C quinoa
2 T chia seeds
1/3 C flaxmeal
1 tsp cinnamon
¼ tsp nutmeg
1/3 C honey
1 tsp salt
½ C maple syrup
2 T olive oil
1 t vanilla


  1. Preheat oven to 325 degrees.
  2. Mix all ingredients together. 
  3. Line a 9 x 13 pan with parchment paper. Pour the ingredients into the pan. Smooth out so its evenly distributed throughout the pan. You can do this with a rubber spatula or by placing a sheet of plastic wrap over the mixture, and smoothing with your hands. 
  4. Bake the mixture, uncovered, for 35 minutes. Take out of oven and let cool.
  5. Once cooled, pull the slab out of the pan using the sides of the parchment paper. Cut into pieces. 

This is what it would look like the oven. The smell is going to rock you home!

I’ve already eaten two bars today, and can’t wait to have more in the coming days! Nothing feels better than enjoying a delicious food, knowing that you are also consuming something homemade, healthy, and economical.
