One Hour Dinner Rolls

One hour dinner rolls 2  These are delicious and they can be made in a pinch. I’ve now made them three times in the last few months, and I’ve never had leftovers. Pair this with some whipped herb butter, and you’ve got a hit. Get the recipe here.

Herb butter: Soften 1 stick of unsalted butter and combine with 1 tsp thyme, 1 tsp rosemary, 2 T finely chopped chives or green onion, 1/2 tsp salt, 1 tsp lemon juice. Use mixer, whip butter and herbs for about 15-20 seconds. Spoon into a small serving dish and refrigerate for at least 1/2 hour.

Blueberry Streusel Muffins

image The recipe is grandma’s baking kind of scrumptious, and its a quick make when you’re in a pinch. That said, I tweaked the streusel topping a bit. Even though it turned out well the original way, I think the streusel cooks better this way:
(1) When making the streusel only, use COLD butter.
(2) Use brown sugar instead of white sugar.
(3) Add 1/4 tsp nutmeg to the streusel.
This is friend/co-worker tested an approved – Get the recipe here.
